Shakshuka Pt. 2

Another Sunday afternoon.

Sitting down to write is becoming (once again) a highlight of my week. Spending most of my time at work and on the commute I don’t have as much time for this hobby as I’d like to. I write in my notebook but writing for my website or newsletter is a bit more relaxing. Here I focus on things I enjoy, which aren’t as heavy.

One thing I do manage to do everyday, primarily because I have to is to eat. On days where I can I like cooking. Saturday & Sunday tends to be those days for me. I’ve mentioned it before but I really enjoy cooking. Since I first started cooking curry & rice decades ago I’ve never lost the love for it. For me it is often a solitary activity but it is also a social activity. I’ll joke around with my brother & my father while cooking – discuss what happened during the day or discussing what is up for the next day or the weekend.

Last week we made our first Shakshuka and it is a firm favorite at this point. So much so that we did it again yesterday.

With a mixture of tomatoes, a tomato & onion smoor, eggs (four of them) we set out to create a nice dinner. We combined this with some ground beef and a few cheese topped hotdog rolls as opposed to pita or bread to scoop it up with.

The results

Delicious. I used some spice on the ground beef (a Vindaloo Curry mixture) with some paprika, black pepper and fresh basil from the garden. For a time it seemed like something daunting because I wasn’t sure about how the eggs would come out – before this I’ve never tried poached eggs. I’ve been scouting the internet for a few more recipes and I suspect this is going to feature on my weekend list for a while.

Food for me isn’t only nourishment on a physical level. Cooking is something I enjoy doing, I love the process and I’m tempted to say if I can find something in a food related industry (working on a kitchen preferably) I wouldn’t be too unhappy.
